Which OS should I use if I want to start learning more about computers and how they work?

I'm interested in learning a new OS, preferably one that is not too hard to learn, but still teaches me the inner workings of the OS, and teaches me to code a little bit. I heard about FreeBSD, OpenBSD and Dragonfly BSD, but I really don't know much about them. What should I get?
